Green Lentil Curry

Ingredients:

  • 1 cup split green lentils
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 2 tbsp vegetable oil
  • Fresh cilantro for garnish (optional)

Instructions:

  • Rinse the lentils and set aside.
  • Heat vegetable oil in a large skillet over medium heat. Add onion, garlic, and ginger, and sauté until softened and fragrant.
  • Stir in curry powder, ground coriander, turmeric, and cumin, cooking for another minute.
  • Add diced tomatoes, coconut milk, and lentils. Stir well and bring to a boil.
  • Reduce heat and simmer for 25-30 minutes, or until lentils are tender and curry has thickened.
  • Season with salt and pepper. Garnish with fresh cilantro if desired.
