Ingredients:

  • 1 teaspoon organic ginger powder
  • Honey & Lemon Juice
  • Hot water

Instructions:

  • Mix ginger powder in hot water. Let it steep for 2-3 mins.
  • Add honey & lemon juice to taste.

Gingerbread Cookies

Yields: About 24 cookies

Cook time: 8-10 minutes

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves

Instructions:

  • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the egg and molasses.
  • In a separate bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Using a cookie cutter, cut them into the desired shapes.
  • Bake for 8-10 minutes, or until the edges are set and the centres are slightly soft.
  • Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
