Organic Coriander Powder

Ingredients:

• 1 cup basmati rice
• 1 teaspoon cumin seeds
• 1 bay leaf
• 1-inch cinnamon stick
• 2 green chilies, slit
• 1 tablespoon grated ginger
• 1 teaspoon coriander powder
• 1/2 teaspoon turmeric powder
• Salt to taste
• Juice of 1 lime
• Fresh coriander leaves for garnish

Instructions:

• Rinse rice thoroughly.
• Heat ghee or oil in a pot. Add cumin seeds, bay leaf, cinnamon, and chilies. Let them splutter.
• Add ginger and sauté for a few seconds.
• Add rice, coriander powder, turmeric, and salt. Stir well.
• Pour in 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer until rice is cooked.
• Fluff the rice, stir in lime juice, and garnish with fresh coriander leaves.
