Yellow Lentil Soup

Ingredients:

  • 1 cup organic yellow lentils
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 cups vegetable broth
  • 1 tsp ground turmeric
  • 1 tsp cumin powder
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh cilantro for garnish

Instructions:

  • Rinse the yellow lentils under cold water until the water runs clear. Set aside.
  • Heat olive oil in a large pot over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for 5-7 minutes until softened.
  • Stir in the turmeric and cumin, and cook for another minute.
  • Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the lentils are tender.
  • Season with salt and pepper to taste. Use an immersion blender to blend the soup to your desired consistency.
  • Serve hot, garnished with fresh cilantro.
