Emmer wheat, known as Khapli in India, is one of the oldest cultivated grains, dating back to 9700 BC. It is believed to be the ancestor of modern wheat. This ancient grain played a pivotal role in sustaining empires, from the Pharaohs of Egypt to the legions of Rome. India embraced Emmer during the flourishing Indus Valley Civilization. Its cultivation spread across the country, with particular prominence in southern Maharashtra, the Saurashtra region of Gujarat, and certain southern states. For millennia, Khapli has been a cherished staple, nourishing generations and adapting to the diverse Indian terroir.

Replace some or all of the all-purpose flour in your favorite recipes for breads, pasta, pancakes, and waffles. Aim for a 1:1 substitution for denser results or a blend with all-purpose flour for a lighter texture.

Emmer Wheat Pancakes

Ingredients:

  • 1 cup Organic Emmer (Khapli) Wheat Flour
  • 1 tablespoon jaggery or any sugar of your choice
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1 cup milk
  • 1 egg
  • Vegetable oil for cooking
  • Dark Chocolate chips / Blueberries (Optional)

Instructions:

  • In a bowl, whisk together flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together milk and egg.
  • Combine wet and dry ingredients, mixing until just combined.
  • Optional: Stir in chocolate chips or blueberries at this point.
  • Heat oil in a non-stick pan over medium heat.
  • Pour 1/4 cup batter onto the pan and cook until bubbles form on the surface.
  • Flip and cook until golden brown on both sides.
  • Serve with maple syrup, honey, or add your favourite toppings.

Khapli Roti

Ingredients:

  • 2 cups Organic Emmer (Khapli) Wheat Flour
  • 1 cup water
  • Salt to taste

Instructions:

  • Mix flour and salt in a bowl. Gradually add water and knead into a stiff dough.
  • Divide the dough into equal-sized balls.
  • Roll each ball into a thin circle using a rolling pin.
  • Cook on a hot griddle until golden brown spots appear on both sides.
  • Serve hot with your favorite curry or pickle.
