Tex-Mex Brown Rice and Black Bean Bowl

Prep time: 5 minutes | Cook time: 20 minutes (including pressure build-up & release) | Serves: 2

Ingredients:

  • 1 cup uncooked brown rice
  • 1.5 cups water
  • 1 can (15oz) black beans, rinsed and drained
  • 1/2 cup frozen corn, thawed (or fresh corn kernels)
  • 1/2 avocado, sliced
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup shredded cheddar cheese (optional)
  • Lime wedges, salsa, sour cream, your favourite Tex-Mex toppings (pico de gallo, guac, jalapenos) - optional

Instructions:

  • Rinse the brown rice thoroughly in a fine-mesh strainer.
  • Add the rice, water, and a sprinkle of salt (optional) to your pressure cooker.
  • Close the lid and ensure the pressure valve is sealed.
  • Select the "High Pressure" setting (or manual setting for 7psi) and cook for 20 minutes.
  • Once the cooking time is complete, let the pressure release naturally for 10 minutes, followed by a quick release for any remaining pressure.
  • Open the lid carefully and fluff the rice with a fork.
  • Assemble bowls with cooked rice, black beans, corn, avocado, onion, and cilantro.
  • Sprinkle with cheese (if using) and drizzle with your favourite toppings.
