Asian Peanut Noodles with Organic Cold-Pressed Peanut Oil

Ingredients:

  • 12 oz (340g) dried noodles (rice noodles, soba noodles, or your preference)
  • ¼ cup (60ml) Organic Cold-Pressed Peanut Oil
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp fresh lime juice (or ½ tbsp lime concentrate)
  • 1 tbsp sriracha (or to taste)
  • 1 clove garlic, minced
  • 1 tbsp grated ginger
  • 1 cup (250ml) vegetable broth (low-sodium)
  • Sesame seeds, for garnish (optional)
  • Chopped peanuts, for garnish
  • Fresh cilantro, for garnish (optional)

Instructions:

  • Cook the noodles: Follow the package instructions to cook your chosen noodles. Drain and rinse them under cold water to prevent sticking. Set aside.
  • Whisk the sauce: In a medium bowl, whisk together the Organic Cold-Pressed Peanut Oil, soy sauce, brown sugar, rice vinegar, lime juice, sriracha, garlic, and ginger.
  • Warm the sauce: In a small saucepan, heat the vegetable broth over medium heat until simmering. Gradually whisk the hot broth into the peanut sauce mixture until well combined. This step helps to thin out the sauce and create a smoother consistency.
  • Assemble the dish: In a large serving bowl, toss the cooked noodles with the peanut sauce until evenly coated.
  • Garnish and serve: Garnish with sesame seeds, chopped peanuts, and fresh cilantro, if desired. Serve immediately and enjoy!
