Organic Red Rice

Red Rice Salad

Ingredients:

• 1 cup cooked red rice
• 1/2 cup corn kernels (fresh or frozen)
• 1/2 cup chopped red bell pepper
• 1/4 cup chopped green onions
• 1/4 cup chopped fresh cilantro
• 1/4 cup lime juice
• 2 tablespoons olive oil
• Salt and pepper to taste

Instructions:

• Combine ingredients: In a large bowl, combine cooked red rice, corn, red bell pepper, green onions, and cilantro.
• Make the dressing: In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
• Toss: Pour the dressing over the salad and toss to coat evenly.
• Serve: Serve immediately or chill for later.
• Optional: Add other vegetables like cucumber, avocado, or black beans for added texture and flavor.
